Growing up in France, Daniel and Georges Daou experienced fine wine from an early age. Now, they are realizing their dream of making premium Cabernet Sauvignon high up on a mountain in Paso Robles. At 2200 feet, this vineyard was once described by Andre Tchelistcheff as a "jewel of ecological elements." With 2400 plants per acre and soils marbled with calcareous rock, this young vineyard holds great promise. Winemaker Daniel Daou explains his winemaking philosophy and methods for creating intense age-worthy wines.
